SMOTHERED PORKCHOPS

 Here is a comfort dish that just made me more comfortable than I have been in a loooong time!  There was a sale on boneless, center cut chops, and a package with 8 pieces only set me back 6 bucks and change.  I took some flour, added salt, pepper, and Old Bay seasoning (1 cup flour, 1 tsp salt, 1 tsp pepper, 1 tbs Old Bay).  Place a chop in the flour mix, then into and egg wash, then back into the flour.  Lay on a plate to rest. 

Take 4 to 5 good size yellow onions, slice evenly, a little on the thin side, and in a medium pan with butter, cook until a golden brown ( caramelize), seasoning with salt and pepper.  With a slotted spoon, pull the onions out, and, after placing 4 tbs of cooking oil into the pan, lay the chops in and cook at least 6 minutes per side.  Now take 2 good pork gravy envelopes and 2 cups of water, mix, and dump into the pan as well.  as the chops are still cooking in the pan with the gravy, dump the onions back in, cover, and simmer until fully cooked,  This is best served over a big glop of mashed 'taters, with some good greens on the side!  Comfort never tasted so good!

Under the taste alikes, please put the already online Olive garden dressing, plus this

Red Lobster-style Schrimp Scampi
1 cup White Wine
1/2 cup unsalted Butter
3 tablespoon minced Garlic
1 pound Shrimp, peeled and deveined
salt & pepper, to taste
Combine the butter, wine, garlic and shrimp in a pan.
Bake in a 350 degree F oven for about 7 minutes or until the shrimp turn pink.
Be careful not to overcook the Shrimp.
Season with salt and pepper, to taste. I always throw some chopped, fresh parsley over the dish as well.
